Mushroom & Potato Curry

Hericium erinaceus curry

Hericium erinaceus (also called Lion's Mane Mushroom, Monkey Head Mushroom (猴頭菇), Hedgehog Mushroom,  Bearded Hedgehog Mushroom, Pom Pom Mushroom, or Bearded Tooth Fungus) is an edible and medicinal mushroom.  This mushroom has a meaty texture and it makes a great meat substitute.

I don't know how to prepare the dried mushrooms so I bought the already processed ones from the frozen food section in the Asian grocery store.

Hericium erinaceus
After blanching in hot water

200g mushrooms, blanched in boiling water
4 potatoes, cut into wedges
150ml coconut cream
salt & sugar, to taste
water, adjust accordingly

Grounded Ingredients:
2 tbsp chilli powder
150g shallots
50g garlic
40g tumeric
40g galangal
2 stalks of lemongrass
5 candlenuts

  • Heat oil in a saucepan and stir fry the grounded ingredients until aromatic.
  • Put in the blanched mushrooms and potatoes.  Stir to combine.  Add enough water to cover the mushroom and potatoes.  Bring to the boil.  Then reduce heat and simmer until potatoes are soft.
  • Add in coconut cream.  Season with salt & sugar.
  • Serve hot with steamed rice.

  1. Hi Veronica
I heard of monkey head mushroom but never had eaten this before. Curry mushroom and potato sounds real great. Oh, btw your updated post does not appeared in the followers reading list again. I follow this new post from your facebook.

    1. Hi Mel thanks for the heads up. Looks like it's playing up again. We are trying to eat less meat and have been eating a variety of mushrooms. So far I love this hedgehog mushroom the best.

  2. Hi Veronica, this curry looks good. I'll be on vegetarian diet soon. Sure will try this curry but I haven't come across this kind of mushrooms.

    1. Kimmy I know for a fact that they sell these mushrooms in the wet market. I've bought this mushroom from a stall that sells tofu, they are kept in the freezer.

    2. Thanks for the info. I'll check it out.

  3. This is a good alternative than the usual meat curry, sound healthy too.

  4. Hi Veronica! This is interesting! So does the mushroom taste like meat? :D

    1. Doesn't taste exactly like meat but close enough :D

  9. Ooh, I love curry of any kind. This looks SO good!

  10. I would like to know why no curry powder is needed for this curry dish, thanks.
    Will it taste like curry?

    1. Hi Pauline, I don't normally use curry powder for my curry. Yes, even without curry powder it still taste like curry. You will be surprised.
