Meat Loaf


0.5 kg minced beef (or combination of minced beef and veal or pork)
3/4 cup finely chopped onion
1/2 cup finely chopped red capsicum
1/2 cup finely chopped carrot
1/2 cup finely chopped parsley
2 tbsp barbeque sauce (or steak sauce)
5 tbsp tomato sauce
1 tbsp light soy sauce
salt & pepper to taste
1 egg
1 cup fresh breadcrumbs
1/2 cup almond meal (optional)
1 tbsp oil

  • Preheat oven to 170 degrees C.
  • Line a loaf pan with baking paper.
  • Heat oil and fry garlic and onions until softened. Add in carrots and capsicum.  Stir fry for about 2 minutes.
  • Combine everything together in a big bowl.  
  • Transfer meat mixture into the prepared pan. 
  • Bake for about 1 hour or until cooked.
